Enjoy my famous cheddar bacon ranch dip this Holiday Season!! This is always a hit when I have ppl over or bring it to share at someone’s house! It’s super easy to make and it makes enough so you will have extra to freeze for future events. Just pre-thaw before baking in oven.
1/2 pound of bacon 4 cups old cheddar cheese 1 - 8 oz brick of cream cheese 1/4 of medium red onion 2 -3 cups milk 1 cup bacon ranch salad dressing Pre-cook/fry your bacon (do not need to fully cook, just enough so it has a head start and is not raw - don't cook until crispy and dry). In a blender add most of the cooked bacon (leave some behind to sprickle on top). Add full brick of cream cheese, milk and 1/4 onion. Blend together in blender until liquified. In a large bowl add shedded cheese, as well as 1 cup bacon ranch salad dressing and add blended purée. Stir together - if this is to runny add more shredded cheese until thickened. Then in a greased small casserole dish, fill the dish with mixture, and cover with foil. - add extra to other pans to freeze for later. Bake in 400 degree oven for 30 mins, uncover and bake for 15 mins. Take out and let cool for 5 minutes (with no lid) to absorb some of the grease. Sometimes may be greasier then others so you can pour off excess grease if needed. If desired add cheese and extra bacon bits on top and broil for 2-4 mins. Use, baked naan bread slices, tortilla chips or crackers for dipping. You can use regular ranch dressing as a sub as well. I also sometimes use half marble and half old cheddar cheese. I add arugula and sprinkled parmigiana cheese at the top sometimes for a fancy extra finishing touch!
